Specialty Coffee Essentials: Brewing a Better Cup at Home

Specialty coffee, as defined by the Specialty Coffee Association (SCA), is a coffee or coffee experience recognized for its distinctive attributes, resulting in a significantly higher value in the marketplace. In simple terms, it is coffee whose origin, variety, processing, and roasting work together to create a flavor profile that feels unique and traceable.

Coffee Classifications

The difference between conventional coffee and specialty coffee is largely about traceability and quality control. Conventional coffee is often sourced and processed for consistency at scale, while specialty coffee is handled with close attention at every stage, from farm to cup. As a result, specialty coffee is more likely to show distinct notes in acidity, sweetness, aroma, and body.

How people enjoy it

Conventional coffee is usually brewed for a familiar, reliable taste and is often paired with milk or sweeteners. Specialty coffee is often enjoyed black, or with very little added, so its natural flavors can be appreciated more clearly.

A simple pour-over method

One of the easiest ways to highlight specialty coffee’s character is through pour-over brewing.

By controlling the flow and temperature, you can unlock the full spectrum of flavors that specialty beans have to offer, delivering a cup that is clean, vibrant, and true to its origin.

Equipment

  • Freshly roasted beans
  • Burr grinder
  • Digital scale
  • Kettle
  • Dripper and filter
  • Hot water: Filtered and heated to about 195°F–200°F

Brew ratio

  • Coffee: 15 g (approx. 0.5 oz)
  • Water: 250 g (approx. 8.5 oz of water)

Brewing steps

  1. Bloom for 30 seconds: Pour about 30 g of hot water over the grounds and wait 30 seconds. This helps release carbon dioxide and supports even extraction.
  2. Pour steadily: Add the remaining water in a slow, circular motion.
  3. Finish brewing: Allow the coffee to drain, then remove the dripper once the target volume is reached.

As the coffee cools, its flavor can change and reveal different layers of sweetness, acidity, and aroma.
